KOBE BEEF MEATBALLS WITH ROASTED TOMATO SAUCE AND CREAMY BECHAMEL
Serves 16 2# Ground Kobe Beef 1# Ground Veal (can be substituted with ground pork as needed) 3 C Toasted Ciabatta bread 1 C Whole milk 2 T Ground Fennel Seed 2 T Ground Caraway Seed 2 T Garlic Powder 1 T Onion Powder ¼ C Salt ¼ C Chopped Parsley ¼ C Chopped Basil METHOD: Preheat oven to 425 degrees. With a knife, remove the crust of ciabatta bread and tear the remaining bread into small pieces. Drizzle the torn beard with olive oil and toast in oven until lightly golden brown. While the bread toasts, mix the ground beef, veal, and all the dry spices in a large bowl. When the bread is toasted and dry, remove from oven and allow to cool. Once the bread is cool enough to handle, crumble the bread into a separate bowl and cover with the whole milk; set aside until milk has been fully absorbed by the ciabatta. When the bread is fully hydrated, combine the bread mixture with the beef mixture, and add the fresh parsley and basil. Mix well by hand until fully incorporated. Form the mixture into 2oz balls and place onto a baking tray. Bake the meatballs in a hot oven until dark golden brown and fully caramelized, about 10 minutes. Once baked, immerse the meatballs into the tomato sauce completely and allow to simmer until fully cooked. Once cooked through the meatballs are ready to eat but can be left in the simmer sauce to be served later. Serve warm with an ample drizzle of the bechamel sauce. TOMATO SAUCE: ¼ C Extra Virgin olive oil 8 cloves Garlic, finely sliced for minced ½ EA White onion, finely diced ½ C Dry white wine 12 Leaves basil, chiffonade 1 can San Marzano tomatoes, crushed 1 t ground black Pepper 1 T Kosher salt ½ T Chili flake METHOD: In a heavy-bottomed cooking pot, warm olive oil over low heat. Once the oil is warm add the sliced garlic and diced onion and allow to cook for 5 minutes, stirring often to ensure the onion and garlic does not burn. When the onion and garlic are soft and fragrant, carefully add the white wine and reduce to ¼. After the wine is reduced add the remaining ingredients and allow to simmer, stirring often, until the sauce is thickened and smooth, approximately 1 hour. Keep the heat on low and allow the sauce to simmer slowly for best results. BECHAMEL: 1 C Dry white wine 4 EA Thyme sprigs 2 EA Bay leaves, fresh if available 4 EA Garlic cloves, crushed 1 EA Shallot, sliced 1 tsp black peppercorn ¼ C All-purpose flour ¼ C Unsalted butter ½ C Whole milk ½ C Heavy cream METHOD: In a heavy-bottomed saucepot place wine, thyme, bay leaves, garlic, shallot, and black peppercorns, and simmer on low. Reduce the mixture to ¼ of the original volume. Once reduced, strain the mixture and place the wine back into the cooking pot. Allow the wine to continue to reduce until almost evaporated. Roughly chop the butter and add to the wine. Keeping the heat on low, allow butter to fully melt and then whisk the flour into the butter and wine mixture to start the roux. Continue to whisk and cook the roux until the smell of raw flour is gone, approximately ten minutes. Combine the whole milk and heavy cream and slowly whisk into the roux watching for any lumps that may form. Allow to simmer for another 10 minutes, adding more milk if bechamel becomes too thick.
Main Course
PRIME BEEF TENDERLOIN
Serves 12 1 EA Prime beef tenderloin 2 oz Unsalted butter 6 EA Thyme sprigs 4 EA Garlic cloves Kosher salt Ground black pepper METHOD: Preheat oven to 400 degrees. Season beef tenderloin with salt and pepper on all sides. Over medium-high heat in a cast-iron pan, sear beef tenderloin until golden and caramelized on all sides. Add butter, thyme and crushed garlic to the pan and baste the beef with the frothy melted butter. Once basted place in oven and cook until medium-rare, approximately 15 minutes. The internal temperature should be roughly 125 degrees if using a meat thermometer. Remove from oven and allow the beef to rest for at least 10 minutes before cutting and serving.

In a heavy-bottomed pot, sweat garlic and shallots until soft and fragrant. Add cream, milk, salt, and thyme leaves and reduce by half. While the milk and cream mixture is reducing, peel and slice the potatoes as thinly as possible and cover in cold water to prevent browning. Prepare an 8×10 inch heavy-bottomed casserole dish with cooking spray or butter. Arrange one layer of the sliced potatoes into the bottom of the casserole dish. Carefully cover the potatoes with the reduced cream. Sprinkle with the white cheddar and parmesan. Place the second layer of potatoes and again cover with cream mixture and grated cheeses. Continue this process the casserole dish is completely full. Add one final layer of the grated cheeses and cover the casserole dish with aluminum foil. Bake the gratin for 1 hour at 350 degrees, remove foil and bake for an additional 20 minutes to brown the top of the gratin. Remove from oven and allow to cool for 15 minutes before serving.

Dessert
BUTTERSCOTCH BUDINO
Yield: 10 portions 1 cup Dark brown sugar ½ cup water 1 teaspoon kosher salt 3 cup heavy cream 1.5 cup whole milk 8 ea. large egg yolks 4 tablespoon cornstarch 4 tablespoon unsalted butter Method
Combine the brown sugar, water, and salt in a heavy-bottomed saucepan, place the pan on the stove over medium heat, cook until the caramel is dark, takes about 14 minutes.
Standing back with caution add the cream and milk to the caramel. This will make the mixture seize up at first, but if you keep whisking and let it heat back up, it will combine. Bring the mixture back to boil, then turn down the heat to medium.
In a large bowl, whisk together the egg yolks and cornstarch.
Temper the caramel mixture with eggs yolks and cornstarch by adding a cup caramel mix to the eggs mixture, whisking constantly, then pour the egg mixture back into the pan.
Increase the heat to bring this mixture to a boil and keep whisking as the custard thickens from the cornstarch, should take two minutes. 6 Remove the pan from the heat and add the butter.
Strain the custard through a fine strainer to remove any big lumps that might have formed and portion the custard into ramekins.
Cover the ramekins with plastic wrap and chill the custard for a least 4 hours…it’s best when you make a day ahead
Combine Ketel One, Chamomile Lavender Syrup, Fresh Lemon Juice, and Cocchi Americano in a shaker.
Add ice and shake lightly. Over shaking will cause the drink to water down; do not over dilute, as we will be adding additional Soda Water.
Roll in Soda Water and strain over fresh ice into a glass.
Garnish with a manicured lemon twist and fresh lavender sprigs.
** Easy Chamomile-Lavender Syrup
Ingredients:
Strong Chamomile and Lavender Tea
Sugar
Instructions:
Brew 1 cup of strong chamomile and lavender tea; allow to steep for 20 minutes.
Remove tea bags or herbs.
Measure remaining amount of brewed tea, stir in an equal volume of sugar (I have reduced sugar without much change in taste) until dissolved.
Chill

Working together with the directors, crew while keeping the audience and contestants in mind they develop a set that provides the sensory experience.
The anxiousness, nerves, and competition felt in the set design. His focus with the set design is taking the story and style of the environment to experience. This draws the audience, crew, and more into the full feeling.
Connelly’s background provides him with the visual aesthetics on stage to convey the feelings, beauty, and functionality. His parents were architect and art teacher. He participated in theater in High School and graduated from college with a fine art degree.
He faces new challenges with every new season on the set. He sees behavior is the result of environment plus personality. He sees the artists’ personality journeying through the hallways and The Voice brand as the environment. There are real stories with each artist. The set creates the feelings and storytelling. This is how he focuses the set design each season.
The new set takes a team effort, without changing the spinning chairs. He is grateful for the team he is working with on the show. He has served on the Peer Group at the Television Academy since 2008 and is on the Academy Governor’s Board. His talent and insight to aesthetics bring this Emmy winner to the Creative Arts Awards again.

Amber Nash joins us on the red carpet at the Emmy® Creative Arts Awards. Her character is Pam Poovey on FX Networks’ Archer. This show allows her to be apart of a smart dirty show.
Nash’s background is comedy, theatre, film, and voiceover. Improv is an important part of her acting world. She continues as time permits to give at Dad’s Garage in Atlantic City. She loves being able to read the audience and respond to the actors on the stage. Moving to a studio setting where she is alone was a change.
Nash said, “it has taken me some time to adjust to the setting after being in the theatre. I am now able to accurately predict how my co-actors will sound and act in each script. My improv training really helped with the adjustment.”
She discusses how much fun and lucky she is to play Pam. Her character is able to say some of the most, “dirty, terrible, horrible things. The writers create such smart content. I love how smart it is. I have to look up references with every script. I am able to learn about the world.”
The fans love Pam and Nash loves her fans. She discussed how important each one is to the show. She said, “some fans even have Pam tattoos.”
She looked fabulous in Adrianna Papell gown, a designer we both enjoy because of her feminine touch and attention to the woman form.
Archer took home 1 Emmy at The Creative Arts for Outstanding Animated Program.

This 10-hour series took 10 years from a conception during film school to airing on Netflix. The story needs time to be told correctly and accurately. The couple moved from New York to Wisconsin for two years. This provided a time for them to research, gain trust about telling the story, and immerse in the story.
They took the story from criminal justice, a victim point of view, to the criminal point of view. The ability for the subjects to trust the duo to share their story accurately made the documentary successful. This documentary is a social justice story instead of criminal justice.
They share the documentary providing a voice, engagement, and conversation that is global. There is an online petition sent to President Obama requesting Steven Avery be exonerated.
They discuss that the documentary is not to solve the crime but to tell the story of Steve Avery, his family, and the community. They said, “we welcome anyone to research the story. It is all public record.”
Emmy’s Creative Arts 2016 Red Carpet
Ricciardi states, “It took some time to get through the noise after the series aired, we are focused on the goal.” They will be returning with season two. The story continues to have questions.
Demos states, “The story continues to evolve. We continue to follow the events taking place. It is not over.” They are working on a project from HuffPost article, America’s Most Admired Lawbreaker.
Ricciardi and Demos work together on filming, concept, production, editing, and a partnership to air the series. The team has grown and they are deeply grateful for them.
The success each day they said, “came from the story and the focus to tell the facts.” Ricciardi states, “The lesson best learned is that we need to have more empathy and dignity towards each other.”
Lady Gaga is preparing for the biggest show in sports, the Super Bowl Halftime Show. The practices and song list not released to the press at this time. This classically trained musician will present a top performance. The stakes for any performance are high. There is nothing comparing to Lady Gaga and Diane Warren’s 2016 Oscars performance ‘Til It Happens to You.
This song was the theme song, The Hunting Ground, a film about multiple students who allegedly sexually assaulted at college campuses, and there claims ignored or required to navigate a complex academic bureaucracy addressing their claims. This collaboration nominated for an 88th Oscars MUSIC (ORIGINAL SONG) and Best Song Written for Visual Media at the 58th Annual Grammy Awards. We meet Diane Warren, at the Creative Arts Emmys®.
Emmys® Creative Arts
Diane Warren’s award-winning music writing started early in life. One of her first songs was Solitaire and Hot Night, for Ghostbusters. She has worked for decades creating award-winning music.
She states, “this song became something more than ever expected. Listening to the stories of these victims compelled me to write the song. I want this song to be the inspiration to all going through a difficult time.” We talked about the moment at the Oscars® when the victims filled the stage. The emotion that filled the room as they stood to share their message of being a victim written on their arms. She said, “It was a moment to listen and feel.”
Backstage Emmys® Creative Arts Awards Diane Warren
Diane Warren is the recipient of Outstanding Original Music and Lyrics, at The Emmys®. She said, “I am a bit overwhelmed at this moment.” This song has carried this message to many sexual assault victims and many more.
“‘Til it happens to you, you won’t know
It won’t be real (how could you know?)
No it won’t be real (how could you know?)
Won’t know how it feels.” (‘Til It Happens To You)
The statistics, “Every 98 seconds, an American is sexually assaulted. And every 8 minutes, that victim is a child. Meanwhile, only 6 out of every 1,000 perpetrators will end up in prison.” (RANN).
“If nothing changes, more than 100,000 college students will be sexually assaulted in the upcoming school year.” (Kilpatrick, Resnick, Ruggiero, Conoscenti, McCauley (2007) The Hunting Ground)
