Over The Rocky Mountains We Go ~ Road Trip

Over The Rocky Mountains We Go ~ Road Trip

The Rocky Mountains (Rockies) was home for me for decades. Many of my ancestors crossed over these mountains to settle the Salt Lake Valley. These gorgeous mountains brought each seasons beauty with exceptional colors. Heading over the RockiesĀ my sister, Cherie, joins for the rest of the journey.

Utah Rocky Mountains

Growing up near the mountains, the seasons each bring a wonderful set of adventures. Mount Timpanogos, a viewĀ seen from the deck of my childhood home, is the second highest mountainĀ the Wasatch Range. It is a great place for:

  • Summer
    • hiking including to Timpanogos Cave
    • camping
    • fishing
    • river rafting
    • boating
    • AlpineĀ Slide in Park CityĀ
    • Seven Peaks Water Park
  • Fall
    • Drive the Alpine Loop at the peak of the leave colors
    • Picnicking
    • Visit Bridal Veil Falls
  • Winter
  • Spring
    • Thanksgiving Point
    • Utah Film Festival
    • Crandall Historical Printing Museum (covers 400 years of printing)

The area hasĀ exceptional art and culture events as well. This is a great place for family road trips and staying for a week of fun.

Lunchtime

Leaving Utah County through Spanish Fork Canyon is a beautiful drive. Spanish Fork Canyon goes south overĀ Soldier SummitĀ (7,477 ft.) and then back down through Price Canyon. The drive is very scenic and great forĀ Geology fans. It is full of wildlife. The Rocky Mountains are such a beautiful relaxing place to play and explore.

We stop in Green River just before Colorado. Lisa Sherman recommended having lunch at Ray’s Tavern. This was our first travel contest. Congrats, toĀ Wes Hawkins at Utah Travels for knowingĀ what city we were enjoying lunch. We ordered the chicken sandwich and a GardenĀ BurgerĀ®. They had a Utah tradition on fry sauce, created by Don Carlos Edwards in the 1950s. It is as simple as ketchup and mayonnaise whipped together. I have seen variations with adding sour cream or buttermilk. This was a treat for sure. It was a great place. The waitress extremely friendly and the food fresh, including the fries.

Colorado Rocky Mountains

Full and ready to get through Colorado to Denver. We hit the road again and see the landscape change more. You lose sight of the Rocky Mountains. The Green Rivers flow into ColoradoĀ RiverĀ (the mighty river that creates the Grand Canyon). The highway follows this along through ColoradoĀ Rockies.

Cherie and Tammy Road Trip 4chion lifestyle
Cherie and Tammy Road Trip

The I-70 takes on new meaning to the Rockies. You enter this large canyon and marvel at the engineering feat you are driving. ColoradoĀ River runs through the narrow canyon that has two-lane traffic in each directionĀ through Glenwood Canyon. The rain andĀ temperature beginĀ falling. Soon iMaps lets us know that we are not going to make to Denver for the night. The freeway closes just up the road for snow. I need to find a hotel before they fill-up. We find the Eagle River Lodge. This was a perfect place to stay for the evening.

Colorado Rocky Mountains road trip 4chion lifestyle
Colorado Rocky Mountains Road Trip

The driving time cut short we enjoyed an evening of great local food and beauty time. Cherie went out to pick-up dinner from Luigi’s Pasta House salad and a medium vegetable pizza. After dinner, we enjoyed a night of cleansing, moisturizing, and using masks on our faces and lips with Burt’s Bees. I have been on the road for a week and traveling through various climates, different types of soap and water, and sleeping locations my skin was feeling tired and dry. Burt’s Bees is so wonderful. Cherie even enjoyed the results. When on a road trip it is important to remember to take care of your skin. Playing on the television in the room was a marathon of Tom Hank’s movies. We head off to sleep for another day of road tripping across the US.

Each dish enjoyed this evening brought a new experience to something familiar. We enjoyed theĀ Navajo burger (with a vegetarianĀ patty), club sandwichĀ (served gluten-free) andĀ Navajo taco (made with Blue Bird flour). Ellie enjoyed a milkshake and nibbling off everyone’sĀ plate. Miss “Foodie” (Ellie) really recommends theirĀ fantasticĀ french fries.Ā  The menu includes the Navajo language providing a funĀ conversation with the staff.Ā  We enjoyed the local flavors and an expansion of cultures. The dining room is a place that feels like a large welcoming dining room. It is decorated in traditional Native America artifacts and a large stone fireplace, it was a beautiful addition to the atmosphere and ties well with the menu. The ceiling a pressed tin is so intriguing.Ā  The beauty outside the cathedral windows is breathtaking. You can see the gorge and the suspension bridge (built-in 1911 for highway 89 traffic) from this place. The sunsets here are magnificent with the gorge and bridge.

Chilean Sea Bass with mango,Ā and quinoa

1 mango, diced
1/4 purple onion, diced
1/2 cup cilantro, chopped
1/2 cup tomatoes, chopped
1 JalapeƱo, finely chopped and deveined
Juice from 2 limes
Pink Himalayan Salt, to taste
4 4.0 oz Sea Base filets
1 1/2 tablespoon extra-virgin or coconut oil
salt, to taste
1 sprig of fresh thyme
1 cup dried quinoa
2 cups water

What You’ll Need To Know

Combine 1 cup quinoa with 2 cups water in a medium saucepan. Bring to a boil. Cover, reduce heat to low, and simmer until quinoa is tender, about 15-20 minutes. Remove from heat and let is sit for 5 minutes. After it has cooked and rested, use a fork to fluff and separate the grains.

Season the sea bass with salt and pepper.

In a large saute pan over medium heat, add the coconut oil and heat the oil to a slight smoke. Add 1 sprig of fresh thyme to the saute pan and sear the sea bass skin side down for 3/4 of the cooking time about 7 minutes. This will give the fish a nice crisp skin and golden color. Carefully turn the fish over, to finish the other side. Remove the sea bass and hold in a warm place.

In a mixing bowl, add the diced mango, purple onion, cilantro, tomatoes, jalapeƱo, lime juice and salt and mix together.

Plate your ingredients with 1/2 cup cooked quinoa, sea bass and mango salsa on top (roughly, 1/4 cup.)

Healthy Eating ~ Modern Market

Healthy Eating ~ Modern Market

What is old is new again. We see this in film, television, summer fashion trends, and food. The concept of farm to table is beginning to take traction in America. The concept that food isĀ healthy, increases energy and provides proper nutrients is a value many are finding for their lifestyle.

Modern Market Foodie 4chion Lifestyle e
Modern Market

Anthony Pigliacampo, co-owner of Modern Market, decides in 2009 the time was like no other to step aside hisĀ corporate job and begin a change in food choices for eating out. The ability to find a healthy choice at a reasonable price was the basis for the restaurant. This was the beginning of Modern Market.

Modern Market Foodie 4Chion Lifestyle a
Modern Market

Modern Market brings the farm to table concept with a modern flair. The food is prepared from farm fresh ingredients in each location each day. The staffĀ Ā is trained and well prepared toĀ cook each meal from scratch that nourishes theĀ mind and body.Ā The food philosophy is, “Have you ever noticed, when you eat great food you feel good?”

Modern Market Foodie 4Chion Lifestyle c
Modern Market Staff

PigliacampoĀ attends the soft opening of Ahwahnee’s Modern Market. He states, “healthy food, every ingredient we consciouslyĀ source. “We actually find the vendor,Ā negotiateĀ with our vendors about the quality products. Arizona is a good location for farm to table. Many of our greens are literally 30 hours ground to our restaurant.” Ā The philosophy is a holistic view on health, added sugar is the devil and good fats are friends.
